Winemaking |
Sourced from a single dry grown 100 year old vineyard; the fruit was hand picked and transported in bins to the winery. Whole bunches were tipped into open top fermenters with the balance crushed on top. Wild ferment, hand plunged 3 times a day and after 12 days on skins the fruit was basket pressed and transferred into stainless steel tanks before being bottled with minimal filtration and fining. This is as close to drinking pure Grenache grapes as it comes! |
