“To live in the hearts we leave behind is Immortality”
Variety: Shiraz
Region: Barossa Valley
Alc/Vol: 15.0%
Winemaker: John Harris
Colour: Deep purple hues fading to a dark, almost black core, framed by a striking crimson edge.
Bouquet: An intensely perfumed and powerful nose, revealing layers of blackberry, dark chocolate, earthy nuances, roasted meat and dusty oak.
Palate: A commanding yet beautifully composed wine, rich with blackberry, plum, mocha and cassis. Layers of dark chocolate, liquorice and peppery spice add complexity and refinement. Beneath the wine’s concentrated fruit lies a fine, architectural line of acidity, bringing precision and structure, complemented by subtle mineral notes. The oak is seamlessly integrated, adding depth and texture without overshadowing the fruit. Powerful yet poised, this is a wine of remarkable depth, structure and exceptional ageing potential.
Winemaking: Sourced from our oldest Shiraz block in Marananga, on the western side of the Barossa Valley, this exceptional fruit comes from vines planted in the early 1900s. The grapes were allowed to slightly dehydrate on the vine, concentrating their flavours and enhancing the wine’s intensity, structure and ageing potential. Given the age of the vines and the exceptional quality of the fruit, the grapes were hand-picked with the utmost care. At the winery, the fruit was hand de-stemmed on sorting tables before crushing. Fermentation took place with 100% whole berries, with the ferment pumped over daily for two weeks to maximise extraction, develop complexity and maintain temperature control. The wine was then drained and transferred to a basket press, where the skins were gently pressed over the course of a day to extract the final layers of flavour and texture. The pressed wine was blended with the free-run juice before completing malolactic fermentation. Maturation took place over three years in our cellars, in a combination of new American and French puncheon barrels. The barrels were sealed with submerged bungs and left without topping or sulphur additions, allowing the wine to develop depth and complexity over time. Bottled without fining or filtration, the wine was then aged in bottle for a further two years prior to release, ensuring it was ready to showcase the quality, concentration and character of this exceptional small-batch wine.
Cellaring: Allow to breathe for an hour or two prior to drinking to allow the true nature of the wine to reveal itself; this wine is built to last for up to 20 years.
